Mama's chestnut squash soup



My parents always get all sorts of squashes as presents. It is a genuine pleasure to cook these tasty organic products "from farm to table" (even though this concept has not emerged yet in France).

Soup is always welcome in wintertime, especially right now as it's getting chillier in France. I am also thinking about people on the East coast, where a major snowstorm is heading to.

My mother is a soup masterchef. Here is her simple and efficient recipe.

You can of course substitute the squash with butternut or kabocha (my favorite so far but it is impossible to find in France)

For a whole pot, you will need :

1 chestnut squash, peeled and diced into 1inch cubes
2 diced shallots
1 garlic clove
1 tablespoon of turmeric
Pepper and fleur de sel for the final touch
Olive oil

In a big pan, roast the squash, shallots and the clove with olive oil and turmeric.
Add three cups of water and let it simmer for 20min (medium heat)
Mix with the
Serve with a pinch of pepper and fleur de sel.
Enjoy while watching the snow falling.
